Grilled Carrots with Herby Yogurt Sauce

Ingredients

  • 1 bunch Bunch Carrots
  • 1-2 tbsp olive oil
  • 1 cup Greek yogurt
  • 1 tbsp Cal-Organic Farms Dill
  • 1 tbsp Cal-Organic Farms Italian Parsley
  • 1 lemon, zest and juice
  • 3 garlic cloves, minced
  • Salt & pepper, to taste

Directions

  1. Wash, peel, and trim the tops of the carrots. Drizzle with olive oil and
    season with salt and black pepper. Wash and chop the dill and parsley and set aside.
  2. Pre-heat the grill on low heat and add the carrots. Grill the carrots until fork tender and lightly charred, about 20 minutes.
  3. To make the sauce, add the yogurt, dill, parsley, lemon zest and juice, garlic, and salt and pepper to taste to a small bowl and mix until combined.
  4. Add sauce to a plate, top with grilled carrots, top with more sauce and enjoy.
