Carrot Hummus

Ingredients
- 1 cup Shredded Carrots
- 1 (15oz) can Chickpeas, drained
- 1/2 cup Lemon juice (about two Lemons)
- 1/4 cup Water
- 1/4 cup Tahini
- 2 cloves Garlic
- 1/2 tsp. Salt
- 1/2 tsp. Cumin
- Carrot Chips
Directions
- Place all ingredients in a food processor and pulse several times to coarsely chop, then let food processor run for about two minutes until smooth.
- Using a spatula, remove hummus from food processor and transfer to serving bowl.
- Serve with Cal-Organic Farms carrot chips, rainbow carrot chips, baby carrots or pita chips and garnish with paprika, roasted garlic or pine nuts!

Containers
Store carrots in a resealable plastic bag or other airtight container.
Shelf Life
To extend the shelf life of your carrots, you can place a damp paper towel in the bag or container, but avoid storing carrots in water as it will soften their texture.
Temperature
Carrots should be stored in the refrigerator between 34 and 36 degrees Fahrenheit.
Avoid Ethylene
Avoid storing carrots near ethylene-producing fruits and vegetables, such as apples or pears.
