Raw Carrot Salad

Ingredients

  • 2-3 Bagged Carrots
  • 2 green onions, chopped
  • 1 tbsp sesame oil
  • 1 tbsp rice wine vinegar
  • 1 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 lime, juiced
  • 1 tbsp toasted sesame seeds

Directions

  1. Wash the carrots and cut off the stem and tip.
  2. Using a peeler, peel the carrots into thin ribbon slices. Add the carrots to a bowl with the chopped green onions.
  3. In a small bowl whisk together the sesame oil, soy sauce, rice wine vinegar, maple syrup, and lime juice.
  4. Toss the salad with the dressing and top with sesame seeds.
